Mixed Nut and Apricot Glazed Ham
- 2/3 cup macadamia and cashew nuts, chopped
- 1 whole leg of ham, cooked on the bone
- 1/3 cup brown sugar
- 1½ cups apricot jam
- 2/3 cup almonds, chopped
- 2 Tbsp mustard
Preheat oven to 180°C.
Carefully remove the rind from ham. Score the fat in a diamond pattern.
Add ¼ cup water to a roasting pan and place the ham on a wire rack in the centre of the pan.
Combine the apricot jam, sugar, mustard in saucepan, stir over a low heat until combined. Brush ham with a third of the mixture to evenly coat. Bake for 50-60 minutes until golden brown.
Add almond, cashew and macadamia nuts to the remaining glaze. Stir well until combined. Spoon nut mixture over ham, pressing the nuts firmly onto the ham to secure. Bake for a further 15 minutes until nuts are lightly toasted. Set aside for 15 minutes before carving.
