Mixed Nut and Apricot Glazed Ham

  • 2/3 cup macadamia and cashew nuts, chopped
  • 1 whole leg of ham, cooked on the bone
  • 1/3 cup brown sugar
  • 1½ cups apricot jam
  • 2/3 cup almonds, chopped
  • 2 Tbsp mustard

  • Preheat oven to 180°C.

  • Carefully remove the rind from ham. Score the fat in a diamond pattern.

  • Add ¼ cup water to a roasting pan and place the ham on a wire rack in the centre of the pan.

  • Combine the apricot jam, sugar, mustard in saucepan, stir over a low heat until combined. Brush ham with a third of the mixture to evenly coat. Bake for 50-60 minutes until golden brown.

  • Add almond, cashew and macadamia nuts to the remaining glaze. Stir well until combined. Spoon nut mixture over ham, pressing the nuts firmly onto the ham to secure. Bake for a further 15 minutes until nuts are lightly toasted. Set aside for 15 minutes before carving.
