Warm up this winter with these fresh recipes

Winter is the perfect time for a hearty meal. But hearty doesn’t have to mean it’s not fresh, as the following Fresh Ideas help you to include lots of seasonal vegetables that add nutrition and colour to your plate.

What’s better than a bowl of soup on a cold, grey afternoon? Our Broccoli and Potato Soup recipe is sure to be a favourite this season, especially when served with crusty bread, and will help you get more fresh into your lunch. Check out our video on how to make it, here.

A stew is also a classic staple of the winter months, with Spiced Vegetable Stew being a tasty dish that’s quick and easy to prepare and full of veges. If soup and stew have your mouth watering, you should also try our recipe for Chicken and Lentil Casserole with Pumpkin Mash, a hearty way to warm up your winter.

Pies are always popular with Kiwis. Our recipe for Middle Eastern Beef Pies is one way to mix up an old favourite. And the Broccoli, Bacon and Mushroom Pie adds even more colour to the filo pastry dish, getting green veges into a pie, and making it extra tasty with with bacon.

You can also add more flavour and colour with your sides, such as Honey and Orange Glazed Carrots, or Carrots with Spiced Butter. If you’re a carrot lover, you should also try the Roasted Carrot and Cumin Soup, another delicious recipe that is perfect for freezing and using as a quick lunch or dinner option during the week.

Need some more inspiration for a main? Look no further than Tuna, Kumara and Rocket Frittata, a tasty dish that’s super easy to prepare – with any leftovers being perfect for the work lunchbox. For another fresh dinner idea, try Fish with Cauliflower Purée, which is a different way to eat cauliflower and complements our fresh NZ Hoki fillets perfectly.

Whether it’s a pie, soup, or side dish, there are many ways to eat more fresh this winter.
