Get inspired with autumn flavours
Autumn is here - the days are getting shorter and the nights are getting colder. It’s still a great time of year for beautiful fresh produce and a chance to showcase some of these ingredients in soups, casseroles and crumbles. For autumn flavours, think pork and chicken, pear, feijoa and apple.
With the cooler weather there’s nothing quite like a bowl of homemade warming soup and this Broccoli and Potato Soup certainly fits the bill. A basic vege stock is so easy to make and can be used in all sorts of soup recipes - just throw in whatever leftover veges you have on hand. Check out our video on how to make a vege stock from leftover veges. Who wouldn’t want to come home to the smell of a beautiful soup just bubbling away?
For something even more hearty, how about a Chicken and Broccoli Bake? Watch our video on how to make it here. This is easy to make and will be a firm family favourite. Just put the dish in the middle of the table and watch everyone dig right in.
Casseroles and stews are the perfect meals for the cooler months. Pork Casserole with Apple Couscous is another crowd-pleaser - there are few better matches than pork and apple! You can even make this gluten free by swapping the couscous for quinoa. Or how about a Beef and Mushroom Pie with Cheese Pastry? Mushrooms are amazing at this time of year, and the beef and pastry will melt in the mouth.
Autumn sees pears, apples and feijoas at their best. Perfect poached or baked, pears are also the stars in this Mini Pear Crumble. The crumble works just as well with apples or feijoas, and is the perfect way to end any autumn meal.
