Sprinkle your plate with spring produce
With spring at our doorstep, comes an influx of new seasonal produce. Spring is a great time to hit the reset button and introduce some fresh and healthy produce after what sometimes feels like a long starchy winter.
Asparagus, you either love them, or hate them. Asparagus are a very nutrient dense vegetable. They’re filled with bone-building vitamin K, and provide a dose of vitamin A and iron. Asparagus are great to eat raw, tossed through a salad with a little olive oil or steamed. Our Asparagus and Pea Risotto makes for the perfect meal. Avocados. Thank goodness, they’re back in season. What’s not to love about avocados? The great thing about them, is that there is no need to be inventive with them, because they go with everything. They’re great on toast, in salads, whipped up as guacamole, the options are endless. Avocados are a nutrient dense food and are rich in antioxidants. They are also high in good fats, which helps fight against heart disease and lower blood pressure. A handy trick when you are storing avocado, if you are only using half, brush it with a little olive oil and store in an air tight container in the fridge, this will avoid it going brown.
At this time of year, courgettes grow fast and furious. Courgettes contain very few calories and have a very high water content. They aren’t a powerhouse of nutrients like other vegetables, but they do provide useful amounts of immune- boosting vitamin C.
