Keeping it fresh for Summer – great ideas for serving in-season produce.
Who doesn’t have fond memories of stopping at that roadside stall, popping your money in the honesty box and driving off with bags full of sun-ripened peaches, tasty tomatoes and berries bursting with flavour?
Lucky for us, Summer is full of delicious fresh produce, perfect for eating as is or for creating mouthwatering meals. As a rule of thumb, anything that needs sun and grows above ground is in season at this time of year. The other bonus is that eating seasonally isn’t just healthy for you and your family, it’s also healthy for your budget!
Here are just a few of our seasonal favourites to feed four for $15 this Summer –
There’s a reason there’s a ‘sweet’ in Sweetcorn. It’s a great source of B vitamins and dietary fibre and nothing could be easier than char-grilled corn on the cob. Just leave on 3-4 layers of husk and pop on the barbie for about 15 minutes. Remove the husk, dot with butter and serve on a platter garnished with coriander. Or if you’re after an easy way to impress, try these simple Corn Fritters with Feta and Bacon. Perfect for brunch or a light lunch.
It’s easy to get 5 plus a day the seasonal way, especially with the great veges on offer – mushrooms, garlic, onion, capsicum and leeks are hot right now and ready to stir-fry. Stone fruit is the sweetest treat right now whether its halved and char-grilled on the BBQ or served up with apricot chicken or pork.
