Leftovers to love for lunches
Looking to save money on work lunches, or just getting a bit over of the usual sandwiches and sushi? Bust meal-break boredom and save time and money by making dinners that can do double duty as lunch the next day! Here are a few of our favourite ideas for next-level leftovers.
A robust grain or roast-veggie-based salad is a great side or midweek meal on its own, and also makes an easy leftover lunch. Serve this sweet and tangy Roast Pumpkin and Tomato Salad alongside grilled meat for dinner, then pile into a wrap for lunch the next day. We also love this Roast Pumpkin and Courgette Risoni Salad.
This Bulghur Wheat and Edamame Salad keeps well and can be topped with boiled egg, tuna or grilled chicken for an extra hit of protein.
Fritters are a true Kiwi fave, and, even better, are easy to make in batches for reheating the next day. These Courgette and Chicken numbers are a great way to use up leftover chicken from Sunday’s roast, and these Curried Cauliflower Fritters can be whipped up in minutes – just serve with a side salad or sandwich veggies in between to make a stack.
Of course we couldn’t mention fritters without including a classic– here’s our favourite recipe for delicious, golden Corn Fritters.
Pasta bakes are so versatile and are such a great way to use up any veggies that have maybe seen better days. This Chicken and Mushroom Pasta Pie can be cut into slices, which makes it super easy to package and transport from home to work, while this Creamy Broccoli and Tuna Pasta Bake with Rocket
is a great low-cost dinner and make-ahead lunch. Looking for something a little bit indulgent? This Roasted Pumpkin and Bacon Pasta Bake is pure crunchy-topped, flavour-packed deliciousness.
