Looking to save money on work lunches, or just getting a bit over of the usual sandwiches and sushi? Bust meal-break boredom and save time and money by making dinners that can do double duty as lunch the next day! Here are a few of our favourite ideas for next-level leftovers.

Tasty salads

A robust grain or roast-veggie-based salad is a great side or midweek meal on its own, and also makes an easy leftover lunch. Serve this sweet and tangy Roast Pumpkin and Tomato Salad alongside grilled meat for dinner, then pile into a wrap for lunch the next day. We also love this Roast Pumpkin and Courgette Risoni Salad.

This Bulghur Wheat and Edamame Salad keeps well and can be topped with boiled egg, tuna or grilled chicken for an extra hit of protein.

Fancy fritters

Fritters are a true Kiwi fave, and, even better, are easy to make in batches for reheating the next day.
